A Mexican twist
What if you could try a quesadilla featuring mango? Well, no request is too odd, because at AKAâu00c2u0080u00c2u0088Bistro, you actually can. The Mango Quesadilla stars mango bits with refried beans and cilantro rice, all folded inside tortillas. Expect an explosion of sweet, sour, spicy and smoked flavours, with a hint of curry.

Tropical sushi rolls

The Chuski Margarita at Farzi Cafe is a classic margarita with an Indian twist. To make it, a raw mango reduction is shaken with tequila, lime juice, and kefir lime leaves. The concoction is then poured into a salt-rimmed margarita glass and served with a popsicle.

"The idea was to make a light dish with mango as the star in a savoury dish, as it is in season," says chef Siddharth Kalyanaraman, who helms the kitchen at NRI. These Mango Rice Wraps use slivers of Alphonso with crunchy bell peppers and cucumber, while the tangy-spicy dip is made with the Badami mango.

Tuck into a wood-fired pizza that's a tad different. "We top the classic margherita with thin slices of juicy Alphonso mango and fresh basil, and serve it with a chilli garlic dip," says chef Larry Paul of British Brewing Company. He adds that the final product is not too sweet or fruity.
