Rains are a time when you can't get enough of your chai. These tea-infused cakes bring the best of both worlds

Not kidding! Now you can eat your tea too

Baked Philly cheesecake at Su Casa
This cheesecake is infused with matcha tea powder. The cream is heated with matcha tea and lavender, strained and cooled. It is then added to the cheesecake mixture. The baked cheesecake is sliced and served with a dollop of blueberry coulis and garnished with lavender flower.

Green tea infused tutti frutti cake at Jeon
Yes, green tea can be a sweet treat too. For this cake, green tea leaves are dry roasted to extract maximum flavours. Later, the dried leaves are powdered and used in the cake batter. That gives the cake distinct taste and aroma of green tea. The tutti frutti balances the bitter-sweet taste, with the jaggery crystals replacing sugar.

Red berries tea cake at Deliciae Patisserie
Black tea made of powdered red berries was folded into the tea cake batter for this one. Cranberries were added to that and the batter was then baked for 40 minutes. The entire cooking process is under three hours, making this sponge cake one of the quicker treats. This can be had with any flavoured tea.

Orange and mango oolong cake at Deliciae Patisserie
Milk infused with oolong tea leaves was used to make a white chocolate ganache. The ganache forms the layer on an orange and almond cake. A tea-infused truffle adds the finishing touch. With a preparation process of six hours, the tea flavours have been kept subtle.
